Tonight’s dinner is beef enchiladas!!  Yum!!   Made with lean beef, low carb tortillas, enchilada sauce, onions, and cheese! Served with plain low fat Greek yogurt instead of sour cream, shredded lettuce (that needed to get used up) and green onions on top for some fresh crunch!

Behold!  Scrubbies! My mother LIVES by these rough little beasts!
