Found this recipe for “Poor Man’s Prime Rib” and thought I should give it a try.
It looked super basic and simple — I’m a lover of “no fuss” recipes, so I figured why not?
I made it last night with what I called “garden vegetable hash” or “succotash” knowing full well it’s just a bunch of sautéed veggies. I used whatever we picked from the garden and cooked them together with some Extra Virgin Olive Oil, salt and pepper.
This meal was actually pretty delicious!
This recipe makes A LOT so we’ll have leftovers for a few days.
I should also note that I used a different cut of meat and it still worked beautifully — except my cut was a little fattier so I’m going to have to do a lot of trimming.
