In lieu of Marathon Monday, I thought I’d check in with some quick triumphs from this past week!

Long run of 5 miles in the books!

Four runs were scheduled for this week, but I started feeling the pull and tug of muscles and took Thursday off to rest up for my 5 mile long run on Saturday.  I’m so glad I listened to my body, because it was AWESOME and I felt like I could run and run and run!

Here are some things I saw on my run:

Also, it’s very difficult to film and run – I had to slow way down and that messed with my average speed O_o.




Weighed in at 188.8lbs as my 10-day record low!

My focus has been eating the right foods at the right times.  I also had one cheat meal this week — half a pepperoni digorno and I’m not even a little ashamed of it.  BOOM PIZZA!


It was worth it.

Totally worth it.


Tried a recipe from Maangchi.com and made it healthier!

Maangchi makes bomb  korean food.  This recipe for crispy crunchy korean fried chicken is absolutely no exception — the only problem?  It’s fried chicken wings.

So I tweaked it a bit — to make it fit better into my healthy-ish diet.


Here’s what I did to tweak it

First, instead of fried chicken wings, I made crispy baked chicken nugget pieces.  I cut up chicken breasts into pieces, coated them with lowfat milk, salt, pepper, & garlic powder, then rolled them in cracker crumbs (I was out of bread crumbs and panko would’ve really been so much better).

Then I baked them in the oven at 375 F for about 20 mins.  While they baked, I made the sticky sweet spicy sauce straight from Maangchi’s recipe…


Once the sauce was done and the chicken was fully baked, I tossed half the chicken nugget bites into the sticky sauce (for hubby) and left the other half naked for me!

Hubby LOVED them and I didn’t have to make two separate meals!  Win WIN!
