…is just an excuse for me to eat more Mexican food. As I’m sure I’ve mentioned before, I LOVE Mexican food — especially tacos and guacamole. SO GOOD!
As I write this, I have some chicken breasts and a can of red enchilada sauce cooking away in the crock pot. Once the chicken is cooked, I’ll shred the meat and use it as the taco meat – instead of the usual ground turkey or ground beef.
Once we stuff this mixture of chicken and sauce into the taco, covered in more sauce and cheese, and then goodies like sour cream and chives, they’ll be bomb-dot-com (hello throwback). Can’t wait to sink my teeth into these chicken enchiladas taco things!
