Day 2 of the Photograph everything you eat – Challenge

 

Breakfast

Was not quite awake, so I didn’t think to take a photo until I’d scarfed down my 2 hard boiled eggs and slice of toast with 5g peanut butter.

 

 

 

 

Snack

This is a repeat snack from yesterday!  Wasa sourdough cracker with a light smear of seriously spicy hummus and topped with deli turkey.

Paired with shredded lettuce and more turkey with spices and red wine vinegar.  Added a hard boiled egg to bump up the protein.

 

 

 

Lunch

More leftovers!!  The rest of the cooked kimchi with some rice — and some cauliflower rice cooked with an egg.  Also a side of water and nori sheets.

 

Dinner

Taco Tuesday is in full force!!!

Pictured below are two soft taco boats filled with super lean ground beef, lettuce, salsa, and shredded lettuce.  I topped each boat with a bit of Plain greek yogurt, which acts just like sour cream.

I love to eat my tacos over a bed of lettuce, because anything that falls out of the taco becomes part of a taco salad!  #lifehack

I also love to eat tacos with lots of salsa!  I subbed my normal tortilla chips with these baked blue corn tortilla chips.  They were surprisingly delicious!
